As many of you know we just celebrated our daughter’s high school graduation this past spring.  Her junior & senior years of high school were some what stressful for our family because of our circumstances of selling our home in South Dakota and moving our family to Texas. that decision was partially because of our daughter’s choice of the university she wanted to attend.  Neither my husband or I did our higher education in the United States and since Amber has been homeschooled since seventh grade, the whole college application and admissions process was slightly overwhelming for our family.

Beef is a source of protein that we eat a lot of in our home.  While costs of beef have risen over the years, I stock up on sales or skimp on other things so that it fits into our budget.  I get a lot of ideas for dinner from  BeefitsWhatsForDinner.com, which is a Beef Checkoff program that their contractor The National Cattlemen’s Beef Association manages.

We had only lived in Texas for two weeks last year when August rolled around.  I was completely in awe of the Hatch Chile invasion that descends upon the state in August.  Little did this Northern transplant know that is because Hatch Chiles from New Mexico are only available during a six week period in August/September.

I used to be able to run from morning to night without a hiccup.  Up early in the morning and then still past midnight, getting 4 or 5 hours of sleep.  I still do that, but with consequences now…if I close my eyes for more than a few seconds in the afternoon…I’m asleep.  I enjoy a good nap, oh yes I do, but there are days that I just cannot let that happen.

Oh my goodness y’all, in exactly ONE week I’ll be dropping my baby off at college.  I still find it hard to believe that I won’t be able to hug her good night each evening or yell at her to take her headphones off so she can hear what I’m asking her each day 😉  Since I’ve had her home with me for the last six years, it will be an adjustment for sure.  I’m very thankful T-mobile 4G is going to make it easier on me.

Not long after we physically say good-bye, I’m going to be traveling.

The temperatures have once again skyrocketed here in North Texas.  And we’re doing everything we can to cool down.  With a few trips on the horizon next month, I’m trying to not eat too many calories these days as I know I’m going to blow the calorie counts when I’m traveling. 

Did you know what the average 8 oz milkshake has in terms of calories?  256.  Yikes!  But I love them.
