Do you like espresso? Then you’ll love this Café Mocha flavored cake that bakes up fast in your microwave and is portion controlled! It is inspired by a recipe from Hungry-Girl.com.
Café Mocha Cake in a Mug
1 tsp. instant coffee granules
1 tsp. mini chocolate chips
2 Tbs. hot water
3 Tbs. white cake mix
1 Tbs. sour cream
1 Tbs. liquid egg white substitute
1/4 tsp. vanilla extract
1/8 tsp. baking powder
1 no-calorie sweetener packet
dash of salt

Spray a mug that can hold at least 8 oz. with cooking spray.
Dump the instant coffee and the chocolate chips into the bottom of it. Pour the hot water into the mug and mix until the coffee and chocolate has dissolved.
Mix in the remaining ingredients.
Bake in the microwave for 1 minute and 45 seconds. The mug will be VERY hot, so allow to cool a bit before you eat it!
You can also add some icing (and sprinkles) to it if you want.
