It’s nearly that time when ‘dribbling and hoops’ take over March 😉 Despite my minuscule size (I’m only 4’9″!!) basketball runs deep in my family tree, and while I’m never chosen first on the playground teams (ha ha), I do love to watch. I am in full-on EXCITEMENT mode and looking forward to our upcoming game day parties. Anybody with me on needing a drink when completing the brackets though?! 😉
My favorite game day snacks to make are BBQ Beef Nachos because they’re easy to assemble, everyone loves them and they pair so well wine. I LOVE appetizers. I could graze on them all day long (and some days I do!). And when the appetizer involves cheese and bacon… you can guarantee I’ll be going back for seconds and even thirds!
If you can brown ground beef, you can make these nachos. The other great thing about them is that you can alter the flavor to suit your guests. Change out the flavor of BBQ sauce or add some additional toppings and voila, a twist on the dish. Make it spicier, make it milder.. totally up to you. No one wants to be slaving in the kitchen on game day either, so cook that beef up ahead of time, use pre-cooked bacon (promise I won’t tell). You can get these nachos ready and baked all during half time!
- 12 oz bag of White Corn Tortilla Chips
- 1 lb of ground beef, cooked and crumbled
- 6 oz of applewood smoked bacon, cooked and chopped
- ¾ cup BBQ sauce
- 1½ cups of shredded 4 Cheese Mexican Blend
- Preheat oven to 350 degrees F.
- Line a baking sheet with foil or silicone and spread chips out on it.
- In a bowl stir together beef, bacon and BBQ sauce.
- Spread beef mixture evenly over top of chips.
- Top with shredded cheese.
- Bake for 10 minutes or until cheese is melted. Serve immediately.
When you’re shopping for some wines to pair with your game day snacks, a few of CK Mondavi’s white varietals are a great choice. 100% American made and just $6.99 a bottle, these quality wines will fit right in with your entertaining budget. (Just in case your ‘bracket’ flops…)
CK Mondavi Pinot Grigio
Tasting Notes: Pinot Grigio is bright with balanced acid and pairs well with seafood, chicken and light sauces.
CK Mondavi Moscato
Tasting Notes: Moscato is a sweet and juicy wine. Delicious with spicy foods or fruit.
CK Mondavi Sauvignon Blanc
Tasting Notes: Sauvignon Blanc is always a crowd pleaser and pairs well with almost any food which is why its goes great with appetizers.
If there were brackets for wine choice to go with my nachos, CK Mondavi Moscato would win the championship hands down. 🙂 But any one, or all of these CK Mondavi wines would be great at your game day parties.
