BBQ Beef Nachos Paired With CK Mondavi for Game Day Parties!

It’s nearly that time when ‘dribbling and hoops’ take over March 😉 Despite my minuscule size (I’m only 4’9″!!) basketball runs deep in my family tree, and while I’m never chosen first on the playground teams (ha ha), I do love to watch. I am in full-on EXCITEMENT mode and looking forward to our upcoming game day parties. Anybody with me on needing a drink when completing the brackets though?! 😉

My favorite game day snacks to make are BBQ Beef Nachos because they’re easy to assemble, everyone loves them and they pair so well wine. I LOVE appetizers. I could graze on them all day long (and some days I do!). And when the appetizer involves cheese and bacon… you can guarantee I’ll be going back for seconds and even thirds!

If you can brown ground beef, you can make these nachos. The other great thing about them is that you can alter the flavor to suit your guests. Change out the flavor of BBQ sauce or add some additional toppings and voila, a twist on the dish. Make it spicier, make it milder.. totally up to you. No one wants to be slaving in the kitchen on game day either, so cook that beef up ahead of time, use pre-cooked bacon (promise I won’t tell). You can get these nachos ready and baked all during half time!

BBQ Beef Nachos

Ingredients

12 oz bag of White Corn Tortilla Chips
1 lb of ground beef, cooked and crumbled
6 oz of applewood smoked bacon, cooked and chopped
¾ cup BBQ sauce
1½ cups of shredded 4 Cheese Mexican Blend

Instructions

Preheat oven to 350 degrees F.
Line a baking sheet with foil or silicone and spread chips out on it.
In a bowl stir together beef, bacon and BBQ sauce.
Spread beef mixture evenly over top of chips.
Top with shredded cheese.
Bake for 10 minutes or until cheese is melted. Serve immediately.
