I loved this peek into an Amish Kitchen, and there were so many great recipes to try. I made these Creamy Chocolate Cupcakes for my husband’s birthday dessert and I had myself a really happy husband! I left off the topping when I made them.

Creamy Chocolate Cupcakes


1 1/2 cups flour
1 tsp. baking soda
1 cup sugar
1/2 tsp. salt
1/4 cup baking cocoa
2 eggs
1 T white vinegar
3/4 cup water
1 tsp. vanilla extract
1/3 cup vegetable oil

Filling
1/3 cup sugar
1 8-oz package cream cheese, softened (I used the new Philadelphia Dark Chocolate Indulgence)
1 egg, lightly beaten
1/8 tsp. salt
1 cup (6 oz) semisweet chocolate chips

Topping:
1 cup chopped walnuts

For cupcakes, mix together the dry ingredients. Add the rest of the cupcake ingredients and mix well. Pour batter into 18 greased or paper-lined muffin cups.

For filling, beat sugar and cream cheese together; add egg and salt and mix well. Fold in chocolate chips. Drop by tablespoonfuls into center of each cupcake. Sprinkle with walnuts. Bake at 350° for 25-30 minutes or until toothpick inserted near center comes out clean.

I love the Amish fiction by Jerry Eicher, and the wholesome entertainment it provides me. This cookbook is a great tie in to all the books that have been written by him. Many of the recipes are simple to make, and other ones are interesting and worth giving a try.
