The first meal of your day, breakfast, is also the most important. You heard your mom say it, your teachers say it, and now I’m sure that’s what you’re telling your kids! Breakfast starts your metabolism. A good, wholesome breakfast keeps your brain and body going until lunch. You’ve also I’m sure, heard or read the statistics that children who eat breakfast do better in school.
If you’re looking for an organic way to feed your family breakfast, look no further than Tropical Traditions Organic Thick Rolled Oats.
Thick Rolled Oats are most commonly used for oatmeal, and cook in about 15 minutes. Add some fresh fruit or dried cranberries for some extra goodness. Top it off with syrup for a real treat. Thick Rolled Oats can also be used in granola bars.
I used the Tropical Traditions Organic Thick Rolled Oats to make Oatmeal Cookies last week. The recipe I used is from Joy of Baking.
Organic Rolled Oats Cookies
- 3/4 cup butter, room temperature
- 1 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3 cups Tropical Traditions Thick Rolled Oats
- 1 cup chocolate chips
Preheat oven to 350 degrees F.
In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until creamy and smooth (about 2 – 3 minutes). Add the egg and vanilla extract and beat to combine. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in the oats and chocolate chips.
For large cookies, use 1/4 cup of batter and space the cookies about 2 inches apart on the baking sheet. Then wet your hand and flatten the cookies slightly with your fingers so they are about 1/2 inch (1.25 cm) thick. Bake the cookies for about 12 – 15 minutes or until light golden brown around the edges but still soft and a little wet in the centers. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.
Makes about 18 large cookies
