Founded in 1920, Emile Noël uses a time-tested artisanal production method. Its traditional presses—very old but carefully maintained —extract oil slowly and carefully. Unlike modern presses, the seeds don’t get too hot and instead release their oil slowly—the ideal way to respect the seeds and their flavors. Emile Noël’s oils have always been non-GMO and organic.
Emile Noël mills a wide selection of organic virgin olive, nut and seed oils including:
Robust Olive Oil
Mild Olive Oil
Sunflower Oil
Sweet Almond Oil
Sesame Oil
Hazelnut Oil
Walnut Oil
Toasted Sesame Oil
There’s a flavor for every palate and style of cooking—helping to enhance a varied, balanced diet.Emile Noël Artisan Oils sent me a a couple of gratis samples of their oils. I received the Mild Olive Oil and the Sunflower Oil.
I had never used Sunflower Oil before, and honestly wasn’t sure how to use it! So I did some online searches and found out that you can basically substitute sunflower oil for any other oil (except olive oil) when making a recipe. So I baked my Easiest 4th of July Layered Cake with it instead of using vegetable oil. It baked up just the same, and had just a slightly nutty taste to it, that we actually all thought enhanced the flavor of the cake. The bonus… most of the fat in sunflower oil is unsaturated.
The Mild Olive Oil had me trying my hand at whipping up a Penne pasta recipe with whatever we had in the pantry and fridge. The family enjoyed it, so I guess I did okay 😉 I used 1/3 cup of the oil in the recipe and the ‘mild’ was perfect for it, because it didn’t overwhelm the garlic at all, it just made it better.
- 12 oz. dried Penne
- 2 teaspoons minced garlic
- ⅓ cup mild olive oil
- 1½ cups grated Mozzarella cheese
- ¼ - ⅓ cup chopped basil
- pepper to taste
- Cook Penne according to package directions in salted water. Reserve 1 cup of pasta water before draining.
- In the same pot cook garlic in hot olive oil until lightly browned. Add pasta. Remove from heat.
- Add cheese and pasta water, return to medium heat. Cook and stir until pasta is covered in cheese.
- Add basil and pepper, stir to combine.
- Serve immediately.

If I don’t have enough mozzarella cheese can I add sharp cheddar to make up the difference
I think that would be fine.
