Penne with Mozzarella , Garlic, and Basil
  • 12 oz. dried Penne
  • 2 teaspoons minced garlic
  • ⅓ cup mild olive oil
  • 1½ cups grated Mozzarella cheese
  • ¼ - ⅓ cup chopped basil
  • pepper to taste
  1. Cook Penne according to package directions in salted water. Reserve 1 cup of pasta water before draining.
  2. In the same pot cook garlic in hot olive oil until lightly browned. Add pasta. Remove from heat.
  3. Add cheese and pasta water, return to medium heat. Cook and stir until pasta is covered in cheese.
  4. Add basil and pepper, stir to combine.
  5. Serve immediately.
