Oooh Sandwiches are Beautiful (Giveaway)

We have sandwiches quite frequently in our home.  They aren’t usually anything fancy, a hoagie bun topped with deli meat and some cheese – sometimes an unusual mustard makes the cut, but still it’s a simple meal we all enjoy.

When I make them, I flashback to my elementary school days when the Canadian children’s singer Fred Penner, made his rounds to local schools and sang catchy little tunes, like Bob King’s “Sandwiches are Beautiful”…and so I sing while I make our sandwiches.

My daughter thought I made the song up, she didn’t really believe that it was a real song, and then I found this fun mashed clip on YouTube with her favorite Disney toons – the Lilo and Stitch gang – singing MY sandwich song.

In any case – what makes an Ultimate Sandwich?  For everyone it’s different.  I’m not overly good at “making up recipes”.  I have no problems following them or tweaking them to our specific tastes but coming up with a wholly original one, isn’t really my thing.  An old standard on the back of a frozen chicken breast patties bag has become my “ultimate” sandwich taste.

MAKES 4 SANDWICHES
INGREDIENTS

*4 frozen breaded chicken breast patties
*8 very thing slices deli ham (about 4 oz.)
*4 slices deli Swiss cheese
*1/4 cup of mayonnaise
*3 Tbsp. Dijon mustard
*8 slices of thick bread of your choice

1. Cook chicken patties as directed by the packaging.  2.  Meanwhile, mix mayonnaise and mustard together.  Spread on the inner two sides of the bread slices.  3. Place chicken on one slice of bread on top of mayo/mustard mix, top with ham (folding to fit if needed) and cheese.  Put the other slice of bread (with the mayo/mustard mix on top of the cheese) on top.  4.  Put on a heated Panini maker (or an electric grill) for 2 to 3 minutes or until cheese is melted.

Total time about 25 minutes.
