We’ve all thought it when we’ve seen a celebrity chef that’s slim – “How do they stay trim with a career like that?”
Allison Adato explores this in her new book Smart Chefs Stay Slim by interviewing America’s Best Chefs and getting lessons on eating and living from them.
I was thrilled to be able to read this book, as well as try some of the chef created recipes in my own kitchen.
The book came about because Adato is a People magazine editor and her job was covering the restaurant world. When she began to notice that all that eating out was causing her to gain weight, she turned to the very chefs that were helping her gain it to learn how to get it back under control.
The book features tips and home recipes from Ricky Bayless, Michelle Bernstein, Tom Colicchio, Cat Cora, Thomas Keller, Marc Murphy, Andrea Reusing, Eric Ripert, Marcus Samuelsson, Nancy Silverton, Michael Symon, Ming Tsai and many more. Art Smith contributes the forward and it is inspirational to read his journey from weighting 325 pounds losing more than 100 of that and running a marathon, all while cooking and being surrounded by food every day!
I’ve been able to keep off the 30 lbs I lost nearly 10 years ago, but it hasn’t always been easy. And now that I’m turning 40, it’s getting even more difficult to keep the weight off when I’m not careful how I eat. One of the biggest problems I have is not eating a proper breakfast, so I was encouraged to find a couple of tasty recipes that I could use that were also healthy.
One is Nate Appleman’s Breakfast Smoothie – that will fuel you until lunch.
The other was Susur Lee’s Muesli – which I adapted slightly to fit my pantry.

Susur Lee’s Muesli
makes roughly twelve 1/4 servings of muesli
1 cup raw oatmeal
1/2 cup raw almonds, sliced
1/2 cup raw walnut pieces
1 cup craisins
Mix ingredients together and store in an airtight container.
For serving:
1 tablespoon Greek yogurt
Milk
Honey
Serve a portion of the muesli (1/4 cup to 1/2 cup) in a bowl with the yogurt, a splash of milk and a little honey.
