Herb Seared Halibut with Potato Ragout – Disney’s Art of Entertaining

One of the neat things on sea days that Disney Cruise Line offers is a series of demonstrations called “Art of Entertaining”.  On our Alaskan cruise my mom and I attended three of these where some of the head chefs on the ship showed us how to make main courses, appetizers and desserts and then we got to taste them!

Here is one of the recipes that we got to see created!

Herb Seared Halibut with Potato Ragout
Serves 4

Ingredients

Halibut

      •  2 pounds halibut fillet, cut into 2 ounce pieces
      •  2 tablespoons olive oil
      •  5 Sprigs fresh thyme, leaves
      •  2 garlic cloves
      •  kosher salt and ground black pepper, to taste
      •  1 Lemon Juiced

Ragout

      •  1 small onion,diced
      •  1 tablespoon olive oil
      •  1 cup vegetable stock
      •  1 cup cooked, diced Yukon Gold Potatoes
      •  1 tomato diced
      •  1 ounce black olives
      •  1 sprig chopped fresh basil
      •  kosher salt
      •  ground black pepper
      •  5 red peppers, roasted, peeled and diced
      •  3 finely chopped chives

Instructions

Halibut Directions

1. Season the halibut with the salt, pepper and lemon juice
2. Heat the olive oil in a medium sauté pan over high heat
3. Once heated, add the halibut and sear on both sides until golden
4. Add the thyme and garlic and baste. Set Aside.

Ragout Directions

1. Heat skillet with olive oil
2. Sauté diced potatoes and onion and simmer over medium heat.
3. Add tomatoes, olives and basil
4. Deglaze with the vegetable stock
5. Season with salt and pepper to taste
6. Add the roasted red pepper and gently warm.
7. Toss all together lightly

 

This was fantastic – but how about this…Chef Corey even filleted the halibut he used right in front of us …just for the halibut…(Groan, I know!)
