Dessert for Brunch – a Fun Tailgating Recipe with Milky Way Bites

Game day.  The TV is always on in our home.  We’ve been a little disappointed with the performance of our team (yes, we were Cowboys fans even before we moved to Dallas) as of late they’ve been leaving a bit of a sour taste in our mouth.  So on Sundays when the games are at noon, we like to make those games a tiny bit sweeter even when our ‘Boys’ are fumbling the ball.  Dessert for Brunch makes a great tailgating treat and this past week I made some Cake Batter Pancakes with Milky Way Bites that help take the sting out a bit when the Cowboys lose 😉

serves 4

Ingredients

1 cup all purpose baking mix
1 cup yellow cake mix
1 cup milk
1 teaspoon vanilla
2 eggs
1 7oz bag of Milky Way Bites
Vanilla frosting

Directions

1. From the Milky Way Bites bag, set aside 16 Bites.  Quarter all the bites, making sure to keep the quartered portions of the 16 set aside in reserve.

2. Combine the baking mix and yellow cake mix together.  Add the milk, vanilla and eggs and stir.

3. Fold in the chopped Milky Way Bites.

4. Heat your griddle or pan on the stove top and pour the batter by 1/4 cupful until the pancakes are golden brown (about 3-4 minutes on each side).

Yes, we eat a LOT of pancakes in our home and I even have a specialized pancake maker!

5.  This recipe should make at least 12 pancakes.  Each stack of pancakes will be made of 3.

Placing one pancake on a plate, take a spoonful of vanilla icing and spread it on the top of the pancake.

Place another pancake on top, and spread another spoonful of frosting on top of it as well.  Place the third pancake on top of that.

7. Put a spoonful of icing in a small microwave safe bowl and melt it for 10 – 20 seconds until it’s a liquid consistency.  Drizzle it over the pancakes and then garnish the top with some of the quartered Milky Way Bites that were set aside at the beginning.

  2. @Leona – I didn't try freezing them – but I don't see why you couldn't freeze the pancakes and then "stack" them with the frosting and garnish after you thaw them for eating 🙂 Since we moved from South Dakota to Texas – Vikings are on the radar too!
