Tropical Granola Sundae

I’m trying to get more dairy in my diet this year.  I’m not a fan of milk, but I really like yogurt.  Eating it for breakfast is okay, but since I’m trying to lineup better for me snacks in the evenings I thought a quick to make ‘sundae’ that uses yogurt instead of ice cream would be the way to go.  I found it in a Weight Watchers magazine originally but changed it up just a bit with ingredients I had on hand.  Taking less than 5 minutes to make this Tropical Granola Sundae is a keeper.

Ingredients
  • 1 crunch granola bar, chopped
  • ½ cup pineapple cubes
  • 1 single serve container Coconut Greek Yogurt with whole grain oats, flax & pumpkin seeds
  • shredded coconut
Instructions
  1. In a bowl or parfait cup layer the ingredients in the order listed in the ingredients, ending with the shredded coconut as garnish.

  2. It looks good and is simple to make, but if someone hands me a “sundae”, and it turns out to be yogurt, I would be devastated!!
