I’m trying to get more dairy in my diet this year. I’m not a fan of milk, but I really like yogurt. Eating it for breakfast is okay, but since I’m trying to lineup better for me snacks in the evenings I thought a quick to make ‘sundae’ that uses yogurt instead of ice cream would be the way to go. I found it in a Weight Watchers magazine originally but changed it up just a bit with ingredients I had on hand. Taking less than 5 minutes to make this Tropical Granola Sundae is a keeper.
- 1 crunch granola bar, chopped
- ½ cup pineapple cubes
- 1 single serve container Coconut Greek Yogurt with whole grain oats, flax & pumpkin seeds
- shredded coconut
- In a bowl or parfait cup layer the ingredients in the order listed in the ingredients, ending with the shredded coconut as garnish.
