S’mores = The ooey, gooey snack that everyone loves. We love chocolate and marshmallows in this home and summer isn’t complete without at least one night where we indulge in the treat. Give me S’mores and I am in heaven. It’s a tradition that is worth sharing even in mid-winter when roasting marshmallows over an open fire isn’t really a possiblity in South Dakota.
This recipe was inspired by the Challenge Butter “Real Heritage Recipe Contest”, to re-create a great family heritage recipe using Challenge Butter. Well I don’t know how “heritage-y” S’mores are, but my family thinks they’re great, and these S’mores Bars have become a treat in our home that are much loved. Heritage Recipes have to start somewhere right? So this is a recipe that I actually made up myself (not that there aren’t other S’mores Bars recipes out there, but this one in fact I modified from a pizza dough recipe and changed the ingredients to suit a S’mores base!) – and maybe it’s one that my grandchildren will be asking for the recipe to make their children some day!!

S’mores Bars
INGREDIENTS
3/4 cup of flour
1/2 cup graham cracker crumbs
6 tablespoons of cold Challenge Butter, cut up
1 egg
2 Tbsp buttermilk
1 3/4 cup mini marshmallows
1 1/4 cup semi-sweet chocolate chips
DIRECTIONS
Pre-Heat oven to 350 degrees.
To make crust: Mix flour and graham cracker crumbs together and then cut butter in. When coarse, add the egg and buttermilk to make a dough. Refrigerate for 1/2 hour. Roll out in a 9 x 13 pan (it may not reach quite to the edges, for a thicker crust use a smaller pan). Bake for 20 minutes.
Remove from oven and sprinkle chocolate chips evenly on the crust and then the mini marshmallows on top of that. Place back in the oven for 5 minutes.
After the 5 minutes, remove the pan from the oven and then with a spatula sprayed with cooking spray spread the chocolate and marshmallows over the crust. Let sit for a while until the chocolate has hardened a bit, you can place it in the fridge to speed that process up. Cut and enjoy!
