Penelope’s Delicious and Low Fat Potato Salad

We are super healthy around here, from what we eat to how we live, so I’ve never a big fan of traditional potato salads that include mayo or heavy dairy products (too fattening and not everyone can eat them). It’s important to eat a diet with lots of fruits and veggies, so I make a version of potato salad that is super healthy, very tasty, and likely not on anyone’s allergy list, for folks who need to be careful about their diet but want to keep eating this yummy, high-fiber vegetable. It’s really easy to make too (you probably already have all the ingredients in your home).

Penelope’s Delicious and Low Fat Potato Salad

Ingredients:
2 pounds russet potatoes or yellow potatoes
1/4 cup lemon juice
4 tablespoons olive oil salt and pepper to taste
1 onion, chopped
1/2 cup chopped parsley

Directions:
1. Fill a large saucepan just over half way with salted water and bring to boiling. In the meantime, peel and quarter potatoes.
2. Place potatoes into boiling water and cook until tender (about 20-25 minutes). Drain and put on side.
3. Whisk lemon juice, olive oil, salt, and pepper together in a bowl. Add to potatoes and toss to coat.
4. Add onions and parsley to potato salad, and mix very gently.

Serve and enjoy!

  3. we love traditional potato salad but not all the fat that goes with it. i'm totally trying this! plus you wouldn't have any food poisoning issues if you take this to gathering where the food sits out for awhile.
