When Lori Sandler’s son Benjamin was diagnosed with severe food allergies to dairy and nuts at a young age, she decided to take action.  She had many fond memories of visiting bakeries as a child and wanted Benjamin to experience those same warm moments and treats.  And so years after tasting, testing and refining, the Divvies Bakery was born in 2005, a bakeshop dedicated to peanut free, tree nut free, milk free and egg free products.  The Divvies Bakery is located in South Salem, New York.

Now I’m blessed that none of my family members has food allergies, but despite that Divvies Bakery products are some of my favorite treats to pick up when we visit Walt Disney World.  The bakery on Main Street is where I stop to get Divvies Caramel Corn.

Even though we don’t live with food allergies in our home, the reality is that it’s hard to have snacks and treats on hand when you have visitors, or attend a potluck because you just never know who does have them.  Enter The Divvies Bakery Cookbook (St. Martin’s Press, August 2010)  (By the way Kindle Owners you can get a Kindle Version too!).  In it Lori Sandler shares her story, mission and (best of all) recipes that made Divvies a success.

The Divvies Bakery Cookbook contains more than 70 sweet treats that are easy to prepare, and contains recipes for delicious baked goods such as; Cinnamon Buns, Divvies Famous Chocolate Cupcakes, and Wafflewiches.  It’s hard to believe these treats don’t contain dairy, eggs or nuts.

One of the recipes in the book is Oh Fudge!  and I made a pan of it, which my family was oh so happy to sample.  It was super easy to make and I already had all the ingredients on hand (that’s amazing in itself, I almost never have everything I need for a recipe in my pantry!).  

Make sure that your sugar is completely dissolved when making it.  I thought mine was, but it seemed to recrystalize some making the texture grainy  but it defintely did not effect the taste of it in any way.  Hubby took some of it to work, and while people commented on the texture, he came home with an empty container, so that speaks for itself!
