My mother-in-law used to make the most delicious lemon bars; it was one of my favorite desserts of hers. I have never attempted to make them before, but I recently received a Gluten-Free Lemon Bar Mix from Marion’s Smart Delights.
If you love lemon then this is the perfect baking mix. I love lemons and tart things, everyone else in my house not so much. In this case, this mix is perfect because you can balance the tart of the lemon flavor, and the rest is buttery and not too sweet.
It’s very simple to make, the mix comes in two packages, the crust and the filling.
All you need for the crust is 1 stick of unsalted butter. Simply cut the cold butter into the crust mix. Mix it all together and with wet fingertips press it into the pan and use a fork to puncture the crust a few times. Then you bake it according to the package instructions.
The filling requires 4 eggs and some lemon juice. Here is where you can adjust your tartness accordingly. I used half the base amount (8 -10 tablespoons is recommended, I used 4), and it was just perfect for our family. I also added a bit of sugar at this step just to make it a tad sweeter.
I found the filling very liquidy. I’m not sure if it was supposed to be that way or not, but, that’s how it was. You pour that into the pre-baked crust and put it back in the oven for 20 minutes. At 20 minutes I still had a lot of liquid on the top of the crust, so I put it back in for another 20 minutes. By that time it was almost cooked, but not quite, so I baked it for another five minutes, and then it seemed just right.
When I took the pan out of the oven it smelled delicious, and I think I cut them a bit too early. But they were very yummy! The filling has a custard-y texture to it, and the crust tastes a bit like shortbread.
I didn’t top it with anything, but I think a dusting of confectioner’s sugar would make a nice topping.
