Gooey M&Ms Almond Popcorn

If you’re looking for the ultimate popcorn recipe for an epic movie night at home, this is it.

We’ve been spending most of our evenings indoors the past couple of weeks, because it’s so hot.  We did venture out to check out our local library the other day, and I borrowed Jurassic Park in 3D on DVD to watch.  I decided we had to have something completely yummy to nosh on while we watched it because dinosaurs in 3D are just scary even if they are 20 years old and computer generated, and quite honestly popcorn makes everything better.

The recipe came to me in the M&Ms e-mail newsletter as a video.  Which wasn’t very helpful because although the recipe was made and explained…they gave you no amounts in it (I’m not so talented with: use some of this, and a pinch of that, add this ingredient and stir…I’m likely to have created my own dinosaur in the kitchen with instructions like that) – so thankfully some kind soul did my legwork for me and left a link to the written recipe in the YouTube video comments.  That is a little spicier with some hot sauce added to it, but I left that out when I made mine.  The recipe makes about 8 servings…or in our house 4….

Gooey M&Ms Almond Popcorn


Ingredients

1 bag of popped extreme butter microwaved popcorn, cooled
1/2 cup honey
1/3 cup brown sugar
1/2 cup smooth almond butter
1/4 teaspoon vanilla extract
1 cup plain M&M’S
1 cup sliced almonds

 

Directions

Stir the honey and brown sugar in a small pot and bring to a boil (I love my Pyrex non-stick pot for making things like this, not only is it easy to get out, it cleans up so nicely the next day when I’m washing the dishes!). Simmer the mixture for about 2 minutes, then take it off the heat and mix in the almond butter, until it is melted, then add the vanilla.

Pour the almond butter mixture over the popcorn and stir until all the popcorn is covered with the caramel. Cool for at lest 5 minutes, then stir in the M&M’S and almonds.

I did find the M&Ms and almonds sunk to the bottom of the bowl when I was folding them into the popcorn mixture.  So I washed up, coated my hands with non-stick spray and mixed it together that way.  If you don’t want to do that, you can just set the M&Ms and almonds aside and when you’re serving the popcorn, toss some in each bowl either on top or in layers between the popcorn.
