In the community I grew up in, Lent was not a thing to take part in. When we moved, I genuinely had questions about all the ‘fish’ deals popping up before Easter. A few questions here and there and I finally understood. We don’t practice Lent in our home (although I probably should, there are a number of things I could sacrifice for 40 days and it would likely make my life a lot better because of it), but fish once a week is something I do.
Anyone who has been reading my blog on a regular basis will know that I like easy when it comes to food preparation. I don’t turn down a short cut when I can take it, and there are certain things I won’t even attempt to try from scratch. Fish is one of them. Pre-breaded, seasoned, frozen fish it’s the way I roll. And I am truly thankful for the option to purchase it that way.
I am no less thankful for frozen veggies. My husband and daughter; not big veggie fans. At. All. I need to do serious camouflaging with green leafy things to get them to enjoy them. Frozen veggies make so much sense in my kitchen because we would never eat fresh ones fast enough before they would spoil. And a quick few minutes in the microwave or in a pot of boiling water and I’m on my way to making them more palatable for my picky eaters.
Pinnacle Foods Groups may not be a familiar name to you but their brands probably are. In the freezer section of Walmart you’ve probably seen them. Van de Kamp’s (or Mrs. Paul’s depending on where you live) and Birds Eye Vegetables are a couple of their product lines.
I took a challenge to create an easy family friendly meal of #FishnVeggies using some of their products.
Armed with two $1.00 Coupons (available at http://www.vandekamps.com or http://www.mrspauls.com and http://www.birdseye.com « under the Special Offers Tab at the bottom of the page) – I went to Walmart and bought a box of Van de Kamp’s Fish Tenders and a bag of Birds Eye Baby Broccoli Florets. And with inspiration from some old Woman’s World magazine issues this is what I turned the Van de Kamp’s Fish Tenders and Birds Eye Baby Broccoli Florets into:

Fish Tender Tacos
Ingredients:
1 box of Van De Kamp’s Fish Tenders
1 box of Old El Paso Stand ‘n Stuff Taco Shells
1/2 cup of Chunky Salsa
1 Tablespoon chopped, fresh Cilantro (and extra sprigs for garnish)
Shredded Cheddar Cheese
Sour Cream
Avocado
Directions:
Bake the Van De Kamp’s Fish Tenders according to package instructions.
Pit, peel and slice the avocado and set aside.
Heat the taco shells in the oven according to the package directions, just after you take the fish out of the oven. While this is happening…combine the salsa and cilantro and warm up in the microwave – it shouldn’t take long, maybe about 30 seconds (or less).
Place two of the fish tenders in each taco shell. If you place the flat side of the tender to the edge of the shell, two of them will fit in snugly.
Top the fish tenders with the salsa, and then with the shredded cheese. Garnish with sour cream, the cilantro sprig and the avocado slices.

Sautéed Baby Broccoli with Red Onion
Ingredients:
1 (12.6 oz) bag of Birds Eye Baby Broccoli Florets
2 Tablespoons Olive Oil
½ Red Onion – cut in wedges
1 Teaspoon minced garlic
1 Teaspoon dried basil
1 Teaspoon mustard powder
½ Teaspoon salt
¼ Cup of chicken broth
Directions:
Bring a pot of water to a rolling boil and add the baby broccoli. Cook for 5 minutes, drain and set aside.
In a pan, on medium, heat the olive oil. Cook the onion, constantly stirring for about 6 minutes. Stir in the spices.
Cook for about a minute. Add the baby broccoli, mixing in with the onion and spices until heated through about 2 minutes.
