Easy Santa Fe Stuffed Tortilla Bake – Recipe

Let me share with you a decadent dish that actually is less in fat and calories than one would think, by choosing the ingredients thoughtfully.  The best part, you can easily substitute (remember point number 2 – something that is a must when I look for a recipe) to suit your tastes, or make it even healthier, or notch it up, scale it down for less servings or double it for more!  The original recipe that inspired this dish was from Sandi’s Recipes at The Real Women of Philadelphia site.  It doesn’t really look like that, but the idea is what prompted me to make my:

Easy Santa Fe Stuffed Tortilla Bake


– 1 package of Tyson Grilled & Ready Frozen Chicken Product thawed (I used the Diced Chicken Breast, but the Chicken Breast Strips would work nicely, or if you want to make this without the tortillas you could use the Whole Breast Filets as well – you could also use the refrigerated variety)
– 1 container of Philadelphia Cooking Creme in Santa Fe flavor
– 10 oz of Pizza Sauce
– 1 1/2 cups of 2% shredded cheese (I used mozzarella but cheddar or a blend would work as well)
– 4 Fat Free Flour Buritto Sized Tortillas (you could use smaller ones or flavored ones.  I only used two because our daughter doesn’t care for soft tortilla shells)

Preheat oven to 350.

– In a mixing bowl, mix together the Philadelphia Cooking Creme and the pizza sauce together.  Spread some of it on the bottom of the dish you are going to use to bake it in.

– Place between 3 to 5 oz of chicken in the middle of each tortilla.  Sprinkle with the shredded cheese.  Fold the tortilla together, and place seam side down in the pan.  Top the tortillas with the rest of the Cooking Creme mixture.  ** If you are not using tortillas for the whole dish, or you have extra chicken that you would like to cook up, hold back some of the mixture, then when you are finished topping the tortillas, mix in the extra chicken, and then just place it around the tortillas.

– Top the entire contents with the remaining cheese.

– Bake for 35 minutes.  Enjoy!

This recipe should serve 4.  I used the entire 22 oz bag of Tyson Grilled & Ready Frozen Diced Chicken Breast.  I added the Pizza Sauce to cut down on the ‘fire’ of the Santa Fe.  We aren’t big on spicy, and it did a pretty good job of making the cooking creme a bit on the milder side, as well as making it a bit more spreadable.  Our daughter ate her ‘chicken only’ portion with Tostitos rather than having it baked in a tortilla.

I used a lot of cheese in this recipe, our family motto is “More Cheese Please”.  You could pare down a lot of fat and calories if you didn’t use as much!
