Italian Meatball Enchiladas insideWith the popularity of my Korean Beef Soft Tacos post I have been looking for more ways to do some ‘food fusion.’  I wanted to make something that was fast but still had a homecooked taste to it, and altered a recipe I found for enchiladas to put all the yumminess of Italian food with the inspiration of this Mexican classic.  Using frozen meatballs means that you can put this dish together in no time at all, and it takes just 30 minutes to bake.

MINI MAC & CHEESE POT PIESSince my family’s palate is very sparse, I have to find new ways of serving up the things they’ll actually eat.  I have a pretty good recipe for Chicken Pot Pie that I don’t mess with, but when I saw a magazine ad for Mini Chicken Pot Pies, I was itching to make some mini comfort food and thought “mmm… Mac & Cheese.” 

With as many likes that my not staged, dark and grainy Instagram picture received, I figured I had to blog them 🙂

Double Coverage Game Day Snack with Cheez-It Crunch’d

It’s just a few weeks now until the ‘Big Game.’  I was really into football this year, but since my team suffered a loss yesterday, February 1st is going to be more about the food for me than the actual game .
