I believe in the nut•rition-al power of peanut butter. In my home there is no rationing of peanut butter, everyone can have as much as they like whenever they like.

I got some GOOD peanut butter the other day, new Planters NUT•rition Energy Mix, which features flavors like Banana Granola Nut, Berry Nut and Cinnamon Raisin Granola Nut.

Besides being on the menu for breakfast, I made an easy snack recipe for lunches or after school with it as well. It only takes about 10 minutes to make, so it’s something you can whip up before bed for lunches the next day or in the morning for after school.

Banana NUT•rition Bites

Ingredients
4 heaping tablespoons of Planters NUT•rition Energy Mix in any flavor
1 banana

Directions
1. Slice the banana into 12 pieces.

2. Spoon Planters NUT•rition Energy Mix in a microwave safe dish and warm up for 10 to 15 seconds, just so the peanut butter base is smooth, if you need longer only do it in increments of 5 seconds beyond that point, as some of the ingredients in the Energy Mix may burn.

3. Coat the banana slices in the NUT•rition Energy Mix covering all sides. Use a spoon to help ensure coverage.

4. Place on a nonstick surface (parchment paper, nonstick aluminum foil, etc.), and freeze for a minimum of 3 hours to up to 24.

5. Pack in a lunch box, or enjoy for an afterschool snack.

These gave me lots of smiles from the family, so I’m guessing they liked them.

You don’t have to be a squirrel to think this is a great way to get some extra protein and energy in your day. As a busy mom, I can also see myself just taking a spoon and digging in to the jar to help curb that afternoon tummy rumbling or slump.

  1. I LOVE peanut butter–on lots of things; probably one of my favorites would be chocolate cookies! Kinda like a home-made peanut butter cup!.
    Many times, I'll just have peanut butter on a spoon

  4. I mostly eat peanut butter in sandwiches or on toast. However, I do love carrots and celery dipped in peanut butter. I haven't eaten them in years but I remember them fondly and am now going to have to get some celery and carrots so I can have some again!

  7. I like to spread a generous layer of peanut butter on a Tortilla then sprinkle with a few semi-sweet chocolate chips and then I roll a banana in the tortilla. This is a yummy breakfast or lunch.
