Because of my family’s picky palates, I tend to alter a lot of recipes. It’s rare that I make something ingredient for ingredient in a recipe but every once in a while I find one that I KNOW is going to be a winner just as it’s written. This is one of those recipes.
It comes from the book Everyday Confetti, that I reviewed in January. Folks I’m telling you, it’s full of recipes that will become favorites just like this one. PLUS it has tons of ideas on how to make an ordinary day… something worth celebrating.
My family just loved this, and it’s going on the regular menu.
Bacon-Wrapped Brown Sugar Glazed Chicken
6-8 boneless, skinless chicken breasts, garlic powder, to taste
6-8 strips bacon
1/2 cup brown sugar
Spray a 9 x 13 baking dish with nonstick spray. Rinse chicken breasts and pat dry. Sprinkle garlic powder on all sides of the chicken. Wrap chicken pieces in back and place seam side down in baking dish. Cover each breast with a generous layer of brown sugar, patting it into the chicken.
Bake at 400℉ for approximately 30 minutes, or until the bacon is browned and the chicken is cooked through. Spoon pan drippings over each serving.
