At the end of May I received an invitation to be a part of the Country Crock Casserole Club. I was so excited and so honored to be asked to be a part of this. Casseroles are right up my alley! And being a part of this club has some fun surprises for my readers too.
Alright so let’s get on with the first casserole challenge. Let me tell you what Country Crock sent me to work with.
I received a canister of bread crumbs, a box of rotini noodles, a coupon for a tub of Country Crock, a casserole dish and a recipe card for “Easy Mac & Cheese Veggie Chicken Casserole”. I was to use the supplied kit as a jumping off point to put my own spin on the recipe.
Part of the reason I was asked to be a part of the Country Crock Casserole Club is because I “have what it takes to make a delicious casserole with what I have in my cupboard and a little experimentation.” Oh Country Crock, you don’t know how true that is these days…
I did use the supplied recipe card (albeit I jumped pretty far off the point with it as inspiration!) and most of my kit to make my casserole (I didn’t use the supplied casserole dish, because I honestly wasn’t sure the whole recipe was going to fit in it, and I didn’t want to make a mess of the oven…). And since our goal in the next two weeks before we move is to eat all the food in our pantry and freezer, the rest of the ingredients in my spin, was only what I had on hand, and I called it:
Bacon Cheeseburger Mac Casserole
Ingredients
⁍ 4 Tbsp. Country Crock® Spread, melted, divided (3 & 1)
⁍ 1 can (14 1/2 oz) Sweet Corn Creamed Style
⁍ 8 oz. dry rotini pasta, cooked and drained
⁍ 1 lb. lean ground beef, browned and crumbled
⁍ 2 cups shredded cheddar cheese
⁍ 1/4 cup plain dry bread crumbs
⁍ 2 Tbsp. bacon bits
Directions
1. Preheat oven to 400℉. In a mixing bowl combine 3 tablespoons Country Crock® Spread, creamed corn, rotini, ground beef, and cheddar cheese. Spread into an 8-inch baking dish.
2. Combine breadcrumbs, bacon bits and remaining Spread in a small bowl; sprinkle over top of the casserole.
3. Bake until heated through and crumbs are toasted, about 30 minutes
