My mother-in-law’s chocolate chip cookie recipe is legendary. It was the one thing my husband brought to our marriage that I didn’t somehow try to get rid of over the years
. He used to make them religiously, batch after batch and I was okay with that, because hey, besides always having fresh cookies in the jar, I didn’t have to make them. They became the staple item we brought to family gatherings and potlucks because everybody loved them…and everybody asked for the recipe.
Then one day I thought I could make them ‘better’ and instead of chocolate chips I would put in WHITE chocolate chips. The horror, the disgrace, I was almost ex-communicated from the family! So I put that idea to rest…but only for a while, because I saw a recipe online for “Cookies and Cream Cookies.” Gosh all they were was a basic cookie base (like our beloved chocolate chip cookie) with chopped up Oreo cookies and …you guessed it white chocolate chips.
Ah ha! I thought…I would sneakily try this with Mom’s recipe minus the chocolate chips and adding the chopped Oreos and white chocolate chips. Bazinga! I win! They were proclaimed yummy, delicious, and “the best cookies ever.” I was vindicated
.
And now it is Christmas. And I’m not above bribing Santa, not even a little. I mean I’m sure he gets his share of chocolate chip cookies and Oreo cookies on Christmas Eve. But these?…I’m betting I’ll have a few extra points in my nice column because of them.
Cookies & Cream Cookies
1. Beat the following until light and fluffy:
• 1/2 lb butter
• 1 cup granulated white sugar
• 1 1/4 cup firmly packed brown sugar
• 3 eggs
• 3 teaspoons vanilla
2. Add the following and blend well:
• 3 1/4 cups un-sifted all-purpose flour
• 1 1/2 teaspoons baking soda
3. Stir in the following:
• 2 cups of white chocolate chips
• 22 chopped up Oreo cookies
4. Drop from teaspon onto ungreased baking sheets, 2 inches apart. Bake at 375ºF for 8 to 10 minutes.
