Coconut Flakes. A great item to eat alone, add to baked goods or sprinkle on top of your food.
Not only is it tasty, but it’s a good way to add some extra nutritional value to your diet as well.
Using coconut products in your recipes, provides interesting health benefits. I’ve been reviewing and sharing Tropical Traditions products for a while now, and the newest product I have to share with you are the Coconut Flakes.
100% nautral Coconut Flakes are made from organic dried conconuts in the Philippines that are grown with no fertilizer or pesticides. This premium dried coconut contains no additives or preservatives, and is not sweetened. Our dried coconut products are not treated with sulfites to keep them white. The Coconut Flakes are a larger shredded coconut cut, perfect for garnishing or toppings.
I admit I dug right into my 2 lb. pail of dried Coconut Flakes and began muching away as I thought of all the ways I could incorporate it into our food.
I found a great Coconut Fruit Muffin recipe on the Tropical Traditions website that you could make with them. I on the other hand can be a bit lazy, so I used that recipe as a springboard, and just whipped up a box mix of blueberry muffins and stirred a quarter cup of the Coconut Flakes into the batter before baking.
I think next time I’ll increase that amount, as they tasted great, but I was wishing they had a bit more of a coconut flavor. In any case it provided just a bit of an extra to the muffin mix, plus I love that chewy texture coconut provides.

Another great thing that many people don’t know is that just two or three teaspoons a day helps relieve most of the intestinal discomfort encountered during radiation and/or chemotherapy. Wish I had known earlier in my treatments.
