When most people think of Mexican Food, they think of tacos — but there’s so much more to Mexican than that!

Old El Paso® invites you to get inspired and explore the possibilities beyond tacos for your family’s next Mexican night with delicious recipes for enchiladas, quesadillas, fajitas or burritos using your favorite Old El Paso® ingredients.

Since my family is not big on spicy foods, I need to find ways to tone down certain dishes.  Old El Paso sent me some products to show how I can use them to go “beyond tacos” and I decided to make Mexitali Enchiladas (that would be Mexican / Italian).

MEXITALI ENCHILADAS

 

Ingredients

One package of 8 ct. Old El Paso Burrito sized flour tortillas
3 chicken breasts, cooked and shredded
1 cup of sweet corn
1 1/2 cups of shredded cheddar cheese, divided into a 1/2 cup and 1 cup portions
1 cup of shredded mozzarella cheese
1 – 10 oz can of Old El Paso mild enchilada sauce
1 – 15 oz jar of Alfredo sauce

Instructions

1. Preheat oven to 350° F.

2. In the center of each tortilla place some chicken, a tablespoon of corn and sprinkle with cheddar cheese from the 1/2 cup portion.

3. Roll and place in a baking dish with seam side down. 

4. In a bowl, stir together the enchilada sauce and alfredo sauce.

5. Pour the sauce mixture over the enchiladas and top with remaining cheddar cheese and the mozzarella cheese.

6. Bake for 30 minutes.

  1. I've been making a chicken enchilada bake like this one lately but with corn tortillas. LOVE it!

  2. I make a mexican style casserole. I found the recipe online and we really liked it. All I can remember off the top of my head is it uses Doritoes, ground beef and cheesy taco seasoning mix

  3. I love to make a pot roast that I have cooked in Chipatole Mexican cooking sauce by El Paso and it is delicious, and smells so good cooking in the crock pot all day, add onions, to cooking and serve on flour tortillas, is yummy or over rice..

  4. We really only make taco's or taco salads w Dorito's sometimes we will make Chicken Fajitas

  5. Our family loves enchiladas as well as tamales so that's probably what we would end up making.

  6. we make a taco salad. pretty much same things as on a taco but it is all mixed in a bowl and you crunch up doritos to add in.

  9. I would love to try to fix fajita meat. Both beef and chicken to put in taco's. My Family likes the ground meat I fix for taco's, but I think they would love the fajita style as well. I also want to fix refried beans to go with the taco's, too.

  10. Tacos have always been our favorite. I love enchiladas as well, but they take longer to make. We also love Burritos and refried beans for our Mexican inspired meal.

  11. I love making Mexican food! Made cheese quesadillas yesterday and black bean burritos today!

  12. I would create enchiladas. I've done that many times in the past and it turned out perfect each time. I have a tendency to burn my fingertips when I dip the corn tortillas in the enchilada sauce. I try to be really careful, but sometimes I say ouch!

  13. I like making chilli with crushed torillas, cheese and sour cream topping. Burritos, and fajitas are something I make regularly because it is fast, easy, healthy and cheap.

  14. O boy, we love Mexican and have so many favorite dishes: enchiladas, tostadas!, quesadillas, nachos and chilaquillas – for starters. Oh I make a mean Tortilla Soup too!

  15. I would like to make enchiladas and burritos, and Mexican rice! That sounds delicious! Also, I agree with everyone else:a taco salad and Mexican pizzas sound wonderful. Also, a tortilla filled with Mexican seasoned beef sounds good.

  16. I love to make Mexican inspired chili. Add some salsa, fire roasted tomatoes, red sauce, black beans, white beans, onions, and more for a delicious blend.

  17. My kids have been obsessed with quesadillas lately, I also love to make chimichungas
