My family and friends are posting pictures on Facebook of snow and and cold temps, and while it’s just beginning to feel like Fall here (ha ha you all!), I know a lot of you are in the same boat (or maybe I should say the same igloo?!).
Well this is the season where our slow cookers get worked overtime, and we’ve got a delicious and easy recipe from eMeals to share with you:
Loaded Potato Soup
6 slices bacon
32 oz package frozen diced hash browns
3 cups chicken broth
1/2 cup chopped onion
1 teaspoon seasoned salt
1/2 teaspoon pepper
1 clove garlic chopped
1 cup half-and-half
1 cup shredded Cheddar cheese
1/2 cup sour cream
1/4 cup chopped fresh chives or basil
1. Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp. Drain on paper towels; crumble and set aside.
2. Combine hashbrowns, broth, onion, seasoned salt, pepper and garlic in a lightly greased 5 to 7 quart slow cooker. Cover and cook on low 9 hours.
3. Stir in half-and-half; mash with a potato masher to desired consistency.
4. Serve with bacon, Cheddar cheese, sour cream and chives.
I left out the onions, garlic and chives/basil just for personal preference.
