I’m a little late on getting a post up this morning because my sister and her family came to spend the night. They had been vacationing down in Phoenix and were making their way back home to Canada, and made a pit stop here for a few hours.
It was great fun seeing my nephews (ages 4 and 18 months). They stopped for a few hours on their way down, but other than that this is the first time I have seen the boys, since the younger one was born.
For some reason I always feel the need to make a ‘bigger’ breakfast when we have company, I generally don’t make breakfasts like that for my own family (go figure!?). I found a recipe the other night over on AllRecipes.com (one of my favorite sites to find new recipes), and made this French Toast Casserole for breakfast this morning.

Servings
- 5 cups bread cubes
- 4 eggs
- 1 1/2 cups milk
- 1/4 cup white sugar, divided
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon margarine, softened
- 1 teaspoon ground cinnamon
Directions
- Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8×8 inch baking pan.
- Line bottom of pan with bread cubes. In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla. pour egg mixture over bread. Dot with margarine; let stand for 10 minutes.
- Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top. Bake in preheated oven about 45 to 50 minutes, until top is golden.

I actually found it very ‘eggy’, more like scrambled eggs with some cinnamon/sugar bread on top, rather than ‘french toast’ – it wasn’t bad, but I don’t know that I’d make it again without some tweaks, like less eggs, LOL.
My sister said it was really good though, and my brother-in-law had a second helping, so it couldn’t have been too bad. My family though, didn’t eat more than what they originally put on their plate!
