With family here for the holidays I’ve been cooking a lot this past week.  So it was a great thing when I was sent a kit as part of the Country Crock Casserole Club to help me prepare a Family Fave Veggie Casserole to enjoy for Thanksgiving.

As part of the kit they always include a recipe card.  This month it was for their Thanksgiving Family Fave Veggie Casserole.  Generally I use the recipe Country Crock includes as a jumping off point to create a casserole that’s all my own, but this month I altered it just very slightly as it is chocked full of all the things my family loves to eat anyway!

One of the things that is a must for me with holiday cooking is that the recipes are quick and easy to prepare. I don’t want to be slaving away in the kitchen when I have guests over! My family loves it when I pair cheese with vegetables, so I knew that it would go over well with everyone at the table.

This recipe is really easy to make when you use frozen vegetables and so there is no real prepping involved, and it is so tasty.  My mom, who I think is a super cook mentioned that she liked it because the vegetables weren’t mushy, they were cooked but still had firmness to them which is a nice thing if you’re warming it up later as leftovers.  Since my picky husband and daughter ate it with gusto, and my mom also mentioned that it was good, I think it really deserves the title “Family Fave” since it was enjoyed by three generations!

One of the great things about a recipe like this is that you can use fresh, frozen or canned vegetables and you can use any variety your family likes best.  I used cauliflower, broccoli and green beans in mine.
