Chicken Salad with Apples & Radishes

Amber asked for Chicken Salad the other day for lunch.  “But not just boring chicken salad Mom, make it interesting.”  So I did some searches and found a recipe to adapt from on WomansDay.com.  It seems lighter than a traditional chicken salad due to the sour cream I think, and if you’re like some of my readers who think mayo is of the devil, I would think you could substitute the small amount of that with more sour cream also.

Chicken Salad with Apples & Radishes
Serves 2


Ingredients

1/2 Tbsp. Light Sour Cream
1/4 Tbsp. Mayonnaise
dash of salt and pepper
1 5 oz. can of Chicken Breast, drained
1 Radish, diced
1/8 of a Fuji Apple, diced
1/4 stalk of celery, diced

Directions

Mix together the sour cream and mayo.  Add salt and pepper to taste.  Stir in chicken.  Add the radishes and the apples.  Fold in the celery.

Serve on whole wheat bread if desired or eat it right out of a bowl!

    I usually make my chicken salad with Greek Yogurt in place of mayo and/or sour cream.
