BanaNutty Cupcakes Recipe and a Give Away

We’ve just recently become of aware of the fact that our daughter may have become lactose intolerant. This is a VERY difficult thing for her as she drank milk like other kids want soda. It was challenging pinpointing where her stomach troubles were coming from, but it seems to result from dairy.

Blue Diamond Almond Breeze is a great alternative for those that are lactose intolerant. It’s not sweet and has a nice delicate flavor. If you want to increase the sweetness a bit, you can try the Vanilla flavoring of their products. You’ll still have the natural goodness of the almonds and a little kick of sweet with the vanilla flavoring. It’s also available in a Chocolate flavor as well.

I used the shelf-stable Blue Diamond Almond Breeze Almond Coconut blend in a recipe the other day to make some cupcakes and they turned out really well.

BanaNutty Cupcakes
1 ripe mashed banana
3/4 cup white cake mix
2 tablespoons margarine
1 large egg
1/4 cup Blue Diamond Almond Breeze Almond Coconut Blend
Premade Coconut Pecan Frosting

1. Preheat oven to 375 degrees.

2. In a bowl mix all the ingredients, except the frosting..

3. Divide the batter among 6 cupcake liners.

4. Bake for 20 minutes.

5. Cool completely.

6. Top the cupcakes with the Coconut Pecan frosting and serve.

Makes 6 cupcakes double the recipe for a dozen.

As some of you know, I myself don’t really drink cow’s milk. I’ve used another brand of almond milk in my home. So it was fun to try something else thanks to Moms Meet, especially now that we have to get my daughter drinking almond milk too!
