I LOVE Pancakes. They are one of my favorite foods. I could eat them all the time. I’ve begun experimenting with my pancake batter to try and make my pancakes even tastier by stirring extra things into it. Last week I made Rocky Road Pancakes, and here’s how.
Rocky Road Pancakes 
makes a dozen
2 cups of baking mix
1 1/3 cups of milk
1 large egg
2 tbsp sugar
1/2 cup of chunky peanut butter
1 cup mini chocolate chips
chocolate syrup
mini marshmallows
whipped cream
Preheat your griddle to 375 degrees.
Stir the baking mix, milk, egg and sugar together until blended. Mix in the peanut butter and chocolate chips.
Lightly grease the griddle and then make pancakes using 1/4 cup of batter for each one. Cook until you see bubbles on the surface, flip and cook until done.
Drizzle pancakes with chocolate syrup, sprinkle with mini marshmallows and top with whipped cream.
