When it’s hot outside, cooking hot meals can feel like a chore – so it’s no wonder summer is the most popular season for salads. The thing is, if you’re like me, you often find yourself tossing the same ingredients together over and over again. Do you want to “shake things up” with your salad, but don’t know where to start? Well you can become Salad Savvy with Wish-Bone, and toss those old salad recipes and with their new dressings you can get creative.
I got to hold a Salad Sampler party. I was provided with 4 tasty revamped salad recipes and a Salad Sampler kit that had all the fixings for a summer salad lunch. Salad plates, napkins, Wish-bone salad dressings, even gifts….all I needed to do was provide people to share it all with!
The recipes that I was provided to share were; Mediterranean Roasted Vegetable & Shrimp Salad (using the new Wish-bone Mediterranean Italian Vinaigrette Dressing), Greek Chicken Salad (using the new Wish-bone Greek Vinaigrette Dressing), Panzanella Bruschetta Salad (using the new Wish-Bone Bruschetta Italian Dressing).
The winner though was the Super Fruity Beet & Pear Salad which uses the new Wish-Bone Superfruit Berry Vinaigrette Dressing. Beets and pears are not a combination that I would ever have thought to put together, but the flavors of this salad with the added ingredients was really tasty! Here is the recipe from Wish-Bone.
Super Fruity Beet & Pear Salad
Serves: 4
Preparation Time: 20 Minute(s)
Ingredients
1/2 cup Wish-Bone Superfruit Berry Vinaigrette Dressing
2 large beets, peeled, cooked and cut into 1/2 inch cubes (substitution: use 1 1/2 cups drained jarred beets)
2 large pears, peeled and cut into 1/2 inch cubes
1 cup yellow cherry or grape tomatoes, halved
1 Tbsp. finely chopped parsley (optional)
1 head Boston lettuce, torn into bite-sized pieces
1 Tbsp. crumbled goat cheese
2 Tbsp. finely chopped toasted pecans
1. Toss Wish-Bone Superfruit Berry Vinaigrette Dressing, beets, pears, tomatoes and parsley in large bowl.
2. Arrange Boston lettuce on serving platter, then top with beet mixture, goat cheese and pecans. Sprinkle, if desired, with freshly ground black pepper.
Now it goes against my grain for some reason to ever use a recipe as written…lol… but actually I did change a few things because of dietary reasons for a guest, so I made the plates separately. I also wanted a quicker way of making this, since a working lunch break was accommodated for this salad party.
First I used a Spring Salad Mix rather than the Boston lettuce and I used canned beets and pears for the salad, and just chopped up a regular tomato. I also just chopped up some mozzarella string cheese and broke up some halved pecans for the toppings. Really it tasted very good even with those changes and seconds were had, finishing the salad completely off! I did notice that with all the dressings you really have to make sure you shake them well so they are mixed before you use them, otherwise you’ll get just the ‘oil’ base of the vinaigrette from the bottle.
Now you know I usually provide a lot of photos in my blog posts when I have guests invited to partake in food. I took a picture of my above creation when I assembled it, and put my camera to the side to take pictures of us enjoying salad…but we had such a good time talking, sharing and eating that I totally neglected to take more photos and it wasn’t until I was putting the dishes away after our lunch that I saw my camera sitting on the counter . I wish I had a ‘do-over’ for that.
