Toby Amidor provides delicious, yet healthy recipes to whip up for mom on Mother’s Day or to add pizazz to summer barbecues and celebrations, all featuring Greek yogurt in her new cookbook: The Greek Yogurt Kitchen!

Toby is a leading nutritionist, dietician and recipe developer who currently contributes to the Healthy Eats Blog for the Food Network, US News & World Report, and many others.  She’s also a sought after recipe development consultant who’s worked with celebrity chefs including Elie Krieger, Jamie and Bobby Deen, among others.

Greek yogurt is one of today’s most versatile ingredients.  In her book, Toby shows how it can be used as a healthy replacement in classic family recipes and sweet tooth favorites.  She also includes tips about what to look for when buying Greek yogurt, as well as its numerous health benefits.

From breakfast to dessert and everything in between there are a host of options to incorporate Greek yogurt into your lifestyle, and love it!

I honestly have had difficulty with enjoying Greek yogurt.  The texture and the less sweet taste had me turning back to regular yogurt each time I attempted to try it again.   I thought this cookbook might steer me in the right direction to learn how to make Greek yogurt palatable to my taste buds and I was not disappointed.

While I’m intrigued at the uses for Greek yogurt into our meals and desserts, I typically eat yogurt for a snack – which is why I’ve mostly gravitated to the regular kind, I want something sweet that is still healthy but doesn’t take much work to make.

So I was excited to see the very first chapter of the book was dedicated to snacks.  And I immediately went out and bought a few varieties of Greek yogurt to whip some of them up.

Faux Lemon MeringueThis is as simple as crushing some vanilla wafer cookies, topping them with lemon Greek yogurt and sprinkling some pecans on top.
  Which I should tell you is pretty darn close in taste to an actual Lemon Meringue Pie.  This would make a fantastic dessert for the kids to make for mom on Mother’s Day!

My next snack is going to be Chocolate Delight which incorporates cocoa powder, honey and strawberries with a cup of Greek yogurt.  My fridge is going to be full up of Greek yogurt cups now!

  1. I'm not a big fan of Greek yogurt, however, I may have to try it in some recipes. It would be a great way of making desserts healthier!

  2. Yum! I loved Greek yogurt before it became the hip thing to eat! We even make our own. So many healthy and delicious things you can do with it!

  3. My sister likes this but I am like you, not a fan so far. Maybe in a recipe it would be much better. Looking forward to reading some other recipes you try out.

  4. I have a pasta salad that I make and I use Greek yogurt to add a burst a flavor, and everyone raves about it all the time.

  5. I love Greek yogurt, but I cannot have it in the house due to Superkiddo's allergies. Sadly, the non-dairy yogurts do not even come close.
    These recipes are giving me some ideas for substitutions though.

  8. We love greek yogurt with dark chocolate chopped on top. We like greek yogurt with strawberries. We also like it with bananas and honey. Greek yogurt is very healthy. You have some nice ideas here for Mother's Day!
