Phew that’s a mouthful of a title for a blog post isn’t it?!  I used a roast beef and rice noodle salad recipe from Woman’s Day as inspiration for it, but felt that the apples and avocados were as much a piece of the whole dish as the meat and noodles were, and thus a very long winded (much like this sentence!) recipe title it became.

Roast Beef Apple Avocado Ramen Noodle Salad

Serves 4

Ingredients

8 oz ramen noodles
1/4 cup canola oil
2 Tbsp balsamic vinegar
1 tsp ginger
1 tsp sugar
1 Fuji apple, cut into thin pieces
4 oz sliced avocados
8 oz. deli roast beef, torn

Directions

1. Cook ramen noodles, drain, separate so it’s not one big block and place in a mixing bowl with the sliced apples.

2. In another smaller mixing bowl, mix together the oil, vinegar, ginger and sugar.  Toss this mixture in with the noodles & apples and combine.

3. Dish out onto plates, and evenly distribute the avocado slices and roast beef among the servings.

So I’m fairly new at using avocados in recipes, and I’m not a pro at either picking them out at the grocery store or slicing them up.  Thanks to the Good Cook line of Profreshional gadgets I’m getting a helping hand.  Their Avocado Slicer helps you pit and slice avocados. 

My slices weren’t perfect, but then I think my avocado was riper than it should have been.  I know that with a couple of more tries at it, I’ll be making perfect slices though!  You can see by the right hand side of the picture, that the slicer gets all the avocado out of the skin, so no waste.  And what I really love about it…it’s dishwasher safe!
