Coconut Lime Basil Salad Dressing Recipe for Your Summer Greens ~ and a Give Away

With all the fresh greens and hot weather, Fisher Nuts knows that you are eating salads this summer! Everyone has a favorite salad dressing in the bottled variety, and many more of you I’m sure, have family recipes or your own go to mix to drizzle on lettuce, pastas or rice that makes your salads famous at BBQs and potlucks.

Fisher Nuts challenged some bloggers to come up with our own Summer Salad Recipes, and I created a salad featuring greens, a coconut milk dressing, garnished with Fisher Chef’s Naturals Sliced Almonds and Fisher Dried Cranberries. It was definitely something different than what I usually prepare for a salad dressing, and it is quite tasty!

Coconut Lime Basil Dressing

Ingredients
7 oz. unsweetened coconut milk
1 Tbsp. lime juice
2 tsp. dried basil

Shake all the ingredients together.  

To make the salad pictured above:  arrange romaine lettuce on a plate, garnish with Fisher Dried Cranberries, and Fisher Chef’s Naturals Sliced Almonds.  Pour prepared Coconut Lime Basil Dressing on top.

This is definitely a salad dressing I’m going to make again in the future, and the sweetness of the Fisher Dried Cranberries complement the the tang of the lime juice in the dressing very well.

  2. BLT sandwich salad – In a bowl layer ripped lettuce, chopped tomatoes, and crumbled bacon. In a small bowl, stir a bit of sugar, salt and pepper and some milk into mayo or miracle whip to make a dressing, pour over salad. Top with soft or crunchy croutons. Enjoy!

  5. My favorite summer salad has lots of greens–lettuce, spinach, lots of dark greens and reds–walnuts, tuna, dried cherries, and balsamic vinaigrette.

  6. I like the Mediterranean Pasta Salad with Toasted Almond Vinaigrette recipe from Fisher Nut's website. My favorite summer salad is simply a spinach salad with this Lemon Honey Dressing: 1 teaspoon fresh lemon juice, 1/2 teaspoon honey, & 1 tablespoon olive oil whisked together. It's great with a spicy dish.

  7. Tonight I made a salad with fresh peaches, fresh tomatoes, purple onion and a dressing of EVOO/Red Wine Vinegar/Honey/Salt & Pepper/Basil… tossed and topped with Feta cheese. This is now my new favorite summer salad!!

  11. I like fruit salads (assorted berries, melons, grapes, etc) with a few pecans or walnuts thrown into the mix.

  12. One of my favorite summer salads is made with spinach and fresh fruit (I have previously used strawberries, kiwi, pear slices, Granny Smith apples, and peaches. I top it with cashew pieces and a citrus vinaigrette. Yum!

  13. My favorite is Bacon Potato Salad

    6 to 8 medium potatoes (about 3 pounds), peeled and cut into 1-inch cubes
    1/2 pound bacon, cooked and crumbled
    6 green onions, chopped
    2 celery ribs, finely chopped
    2 tablespoons diced pimiento, drained
    3/4 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup mayonnaise
    1/2 cup sour cream

    Cook potatoes in boiling water to cover in a Dutch oven over medium heat 15 to 18 minutes or until tender. Drain and let cool slightly.
    Place potatoes in a large bowl. Add bacon, chopped green onions, and next 4 ingredients. Stir together mayonnaise and sour cream until blended. Pour over potato mixture, tossing gently to coat. Cover and chill at least 1 hour.

  14. Assorted greens, fruit like cranberries, grapes, mandarin oranges, strawberries, blueberries etc., chicken, toasted pecans and Raspberry Vinaigrette. Yummy.
