A Christmas Tradition ~ Apple Pie Waffles

Having no extended family where we live means that Christmas around here is pretty quiet.  Last night we went to church for Christmas Eve service and then we went to go see The Hobbit.  Christmas Day is usually just a time that we sit around and play games together, maybe watch a DVD.  But one thing we always do is have Waffles for Breakfast/Brunch and watch the Disney Christmas Parade.

Here’s the waffle recipe I used this morning.

Apple Pie Waffles
makes 4 waffles using a round waffle iron

1 1/2 cups all-purpose flour
3 tablespoons white sugar
1/2 teaspoon salt
4 teaspoons baking powder
1 tablespoon apple pie spice
2 eggs, beaten
1 cup heavy cream
2 tablespoons corn syrup
1/4 cup margarine, melted
1 tablespoon vanilla extract

Directions

  1. Combine flour, sugar, salt, baking powder and apple pie spice.
  2. Beat in eggs, heavy cream, corn syrup, margarine and vanilla extract.
  3. Pour or scoop the batter onto your heated waffle iron, cook according to your waffle iron instructions, mine take approximately 4 minutes per waffle to cook.

Here’s a tip to clean your waffle iron.  After you unplug it, but while it’s still hot, wet a strong paper towel, and then double it up and place it between the plates and close the lid.  The waffle iron plates will steam clean themselves!  How neat is that?!
