When my friends say “let’s meet up for coffee,” what they really mean is “let’s meet up at Tammy’s house.” You see I’ve got my very own built in coffee bar in my house, and I’ll play ‘barista’ for anyone who wants to share a cup with me 🙂 You name it, I have it, and my coffee machine collection includes not just one, but two Keurig brewers. When I have guests in summer I replace the hot beverage concoctions and brew iced coffee, iced tea and low calories drinks, over ice. And yes I do that with my Keurig!
I am at Walmart all. the. time. You’ll often find me grabbing a box (or two, or three!) of k-cups while I’m there to feed my Keurig addiction. I like that you can find the k-cups in numerous places in the store. When I was there and picked up the varieties in this post, employees were just stocking an end cap full of different flavors. Of course you can also find them in the coffee aisle, and should you have forgotten to get your fix, they have a convenient display right by the checkouts.
The Brew Over Ice flavors from Keurig are tasty all on their own. I love how simple and quick it is to make a Donut Shop Sweet & Creamy Iced Coffee or Vitamin Burst Strawberry Pomegranate Iced Fruit Brew.
But I like to think ‘outside the k cup box,’ and so I came up with a couple of recipes using the Brew Over Ice k cups and want to share them with you.
We went to some friends’ home for a 4th of July party and I was asked to bring a dessert, so I whipped up these Donut Shop Coffee Trifles to share. The best part is that you can control how much coffee flavor you want in the cream layer. Add less or more of the iced coffee to produce a weaker or stronger coffee flavor.
For maximum flavor, brew your Brew Over Ice K-Cups on the smallest cup setting your Keurig brewer offers, and remember no matter what kind of Brew Over Ice variety you are making never use a glass container to brew it in. Shattered glass because of temperature fluctuations is never fun.
Donut Shop Coffee Trifle
makes 10 – 12 individual trifles depending on cup size
Ingredients
Plastic cups for serving trifles in (I used 9 oz. sized ones)
4 bananas, sliced into thirds and then each third sliced into 12 pieces
2 – 10.5 oz bags of mini glazed donuts, cut donuts into quarters as you are making each trifle
1 – 8 oz tub of whipped topping, thawed
2 – 3.56 oz boxes of instant white chocolate pudding
1 Brew Over Ice Donut Shop Sweet & Creamy Iced Coffee, brewed according to package instructions
Directions
1. Whip together: whipped topping, pudding and 1/2 to 2/3 of brewed ice coffee, until mixture is thick and creamy. You can add additional coffee for a stronger flavor but compensate for the extra liquid by whipping the mixture longer, or by adding additional whipped topping.
2. In plastic cups layer approximately 6 slices of banana, then quarter one mini donut and place it on top. Put about 2 heaping teaspoons of the cream mixture on the donuts and tamp down and smooth out. On top of the cream mixture layer 2 more quartered mini donuts, place 6 more slices of bananas on top of them and top with a heaping teaspoonful of the whipped mixture.
3. Serve within a couple of hours of assembling. If making in advance, only assemble up to the second layer of donuts and then refrigerate, do not add the top layer of bananas and cream until ready to serve or the bananas will start turning brown.
If you have extra donuts (or purchase an additional bag) cut through one side and place on the edge of the cups for garnish.
Here’s another easy recipe that you can make to kick up the antioxidants and vitamins in the Vitamin Burst Strawberry Pomegranate Iced Fruit Brew.
Strawberry Pomegranate Smoothie
makes 2 servings
Ingredients
2/3 cup of Brew Over Ice Vitamin Burst Strawberry Pomegranate, brewed according to package instructions
10 medium strawberries
4.4 oz of pomegranate arils
2 cups ice cubes
Directions
Place all ingredients in a blender and process on high speed until smooth. Make sure the pomegranate arils are blended well, the seeds if they remain in tact and crunched upon are slightly bitter. Pour into glasses and enjoy.
It’s perfect for a post-workout snack. When I came home after a walk one morning, I had this delicious easy to make smoothie. It’s packed full of flavor and antioxidants and vitamin C.

Donut Shop is one of my favorites but I've never tried the sweet and creamy, nor have I tried it over ice! YUM! I need to tell hubby abou this, he's our coffee shopper haha.

You know I don't do coffee, but that pomegranate drink sounds fabulous! My favorite K-cup drinks in summer are those Snapple iced tea flavors. Oh yum!!!!
