101 Things To Do With Meatballs

There's more than one way to eat a meatball.  Casa Di Bertacchi helped Stephanie Ashcraft to pen 101 one of them!  101 Things To Do With Meatballs has yummy Appetizers and Sides, Soups, Stews and Chili, Sandwiches, Wraps and more!  The Family Favorites will be asked for again and again.

I've had a chance to try a number of recipes from 101 Things To Do With Meatballs and one of our favorites is the Baked Beefy Mac and Cheese.

Baked Beefy Mac and Cheese

  • 26 (1 pound) frozen, fully cooked meatballs
  • 2 boxes (7.25 oz each) macaroni and cheese dinner
  • 2 cans (10.5 oz each) cream of mushroom soup, condensed
  • 1½ cups milk
  • 2 medium tomatoes, thinly sliced
  • 3 tablespoons grated Parmesan cheese

Preheat oven to 350 degrees. Cook frozen meatballs on a baking sheet for 20 minutes.  While meatballs bake, cook macaroni dinner according to package directions.  Drain the water from the pan.  Stir soup, milk, and cheese packets into the cooked macaroni.  Place meatballs in a 9x13 inch pan prepared with non-stick cooking spray.  Spoon mixture evenly over the meatball layer.  Lay tomato slices over top and then sprinkle the Parmesan cheese over top.  Bake, uncovered, for 25-30 minutes.  Makes 6-8 servings.

Now I'm the kind of person that doesn't always make a list and write down all the ingredients I need.  So I mixed this recipe up just a bit for a little different taste when I didn't have all the ingredients called for. 

These are the ingredients I used (I made half the amount in an 8x8 pan). 

      

I cooked the meatballs

and instead of using Cream of Mushroom soup (because I didn't have any), I used Tomato Soup.  Mixed it all up (it is soupy, but most of it will bake off don't worry). 

Topped it on the meatballs.

Then rather than the tomatoes and Parmesan cheese, I sprinkled shredded Mozzarella cheese on top. 

 

And this is what was for dinner. 

 

Both versions are good, and easy to make, paired with garlic toast it's a great meal.  Casa Di Bertacchi meatballs are available at Sam's Club and they are a great value for your money.

What a great idea! By using tomato soup you basically combined the tomatoes and mushroom soup in one. That's great for someone like me who is always trying to find shortcuts!

I would like your version best because no one in my family likes cream of mushroom soup--we like fresh mushrooms, but not the soup kind!
